These little cookies are perfect for a tea party, shower, or really any time. This is a recipe that I made with a friend years ago. It is one of their family favorites, and I am sure it will become one of yours. They are a light flaky melt in your mouth shortbread type cookie. Topped with a light dollop of powdered sugar icing making them perfectly sweet.
We make these all the time for PH events and they are a hit! Stay tuned tomorrow, for more pics like this, from a recent baby shower! Happy Baking – Erica
1 1/3 cup cornstarch
1 cup powdered sugar
2 cups butter
1 1/2 cups flour
1. Combine ingredients in a bowl and beat until it becomes smooth.
2. Roll into 1 inch balls.
3. Bake at 325 for 15 minutes.
4. Cool on the pan for 5 – 10 minutes. Place on a cooling rack.
5. Once completely cooled frost with the powdered sugar frosting.
Powdered Sugar Frosting:
1 tsp. vanilla extract
1-2 tbsp. water
2 cups powdered sugar or more.
Mix together to make a thick creamy frosting. I like mine pretty thick so it doesn’t get drippy.
I put it in a pastry bag and make a circle on top of each cookie. It gets a nice hard top when it sets.
